Meet Jack.

Jack is my nephew. I have been spending a lot of time hanging out with him this winter. He is a good helper!

He is also an amazing Cousin!

After he plays and helps take care of cousin Loek we do “big” boy activities like make cookies. Check out this yummy recipe!

Gluten Free Chocolate Cookies! 

1/2 cup vegan  butter at room temperature( or coconut/olive oil)

1/2 cup maple syrup

1/4 rice milk

1 tsp vanilla extract

1/2-1 cup grain sweetened  chocolate chips

1 cup brown rice flour

1 cup white rice flour

2 cups oat flour

1/4 cup corn flour

1 tsp xanthan gum

1 tsp sea salt

1 1/2 Tbsp baking powder

In a large bowl blend together  “butter” vanilla , rice milk and maple syrup. In a separate bowl combine dry ingredients. combine the two and stir in chocolate chips. Chill for one hour.

Form dough into balls and press flat onto an oiled cookie sheet. Bake for 10-12 minutes at 350′ 12966827_10156790892545615_2058740201_n
