Fresh herbs are best! Dried herbs are good too! Frozen ones also are nice.
If using fresh herbs in a recipe calling for dried herbs make sure that you multiply the amount by three
1Tbsp of dried herbs = 3 Tbsp fresh herbs
If freezing herbs wash herbs well then chop coarsely and fill the holes in a standard ice cube container. Freeze. Break apart and place into a bag and store for up to 3 months in freezer. Each square of frozen herbs = 1 tbsp fresh herbs.
