Spring Challenge 2016 Day 9 – Green Detox Soup

This is my number one most requested soup recipe! I have one friend who drinks it cold and loves it.

Green Detox Soup

1 lg bunch swiss chard, chopped small

1 lg bunch kale, chopped small

1 bunch green onions, chopped small

1/2 bunch cilantro

5-6 cups filtered water

1 tbsp sea salt

2 potatoes, peeled and chopped small

2 lg onions, peeled and chopped small

1-3 cloves garlic, minced

21/2 tbsp extra virgin olive oil

3-4 cups vegetable stock

pinch of cayenne

to taste  black pepper

1/2 lemon, juiced

Carefully wash all greens. Combine chard,kale,green onions,potatoes and cilantro in a large soup pot and with water, stock and sea salt. Bring to a boil, turn heat to low and let simmer for about 20 minutes. Heat oil in a pan and saute onion until soft. Stir in the minced garlic and cook until it sizzles. Add to the soup. Add remaining ingredients and blend until smooth.
