Oma’s Elderberry Juice
Ingrid loved cooking with her Oma. Oma made elderberry juice and jam. Opa made elderberry wine 🙂
3 pounds elderberries
juice of 1 lemon
4 cups sugar
In a large pot heat the berries, lemon juice and sugar on low until the juice starts to flow and then simmer the fruit for 15 minutes. Strain the liquid through a double layer of cheesecloth . May take several hours.
Since we don’t use sugar at our house we have tried this recipe using 1 cup of rice syrup and it was also very nice!
