Feeling like a rock star

Wow what a great day… Got to sleep-in, baked a cake, had my good friend stop by for a chat, had a wonderful massage by my friend Marilyn Sparling. Made green rolls and soba noodle salad. Then got interviewed on the CBC radio show Mainstreet by Karen mair . Wow was I nervous! We talked about macrobiotics and my after school program . I kept forgetting what I was talking about but with help from Karen I made it through..:) and she enjoyed the cake, green rolls and noodles I brought in for her to try.

Lemon Poppy Seed Cake

3 Cups whole wheat pastry flour

11/2 tbsp baking powder

pinch of sea salt

1/4 cup poppy seeds

1/4 tsp turmeric

1/2 cup extra virgin olive oil

1 cup rice syrup

11/2 cups plain soy milk

zest of a lemon

1/3 cup lemon juice

1 tbsp vanilla

350 degrees 40-45 min

In a large bowl mix all dry ingredients with a big fork or a whisk. Add in all wet ingredients. Stir until there are no lumps.

Pour batter into a  oiled bundt pan, bread pan or 2- 9 inch cake pans.

Smoked Salmon Soba Noodle Salad

1 8oz package of soba noodles

2 tbsp teriyaki sauce

1 medium cucumber , seeded, (peeled if waxed or not organic)sliced into thin strips

1 small yellow summer squash or yellow pepper, seeded and cut into thin slices

1 tbsp toasted sesame oil

1 tbsp rice vinegar (or mirin for a sweeter taste)

4-6 oz smoked salmon cut into thin strips/chunks

2 tbsp toasted brown sesame seeds

In a large pot boil soba noodles for 6-8 min or according to directions on the package. Drain and rinse under cold water.

mix all ingredients together and serve. Can add pan fried tofu strips instead of salmon for a vegetarian option.

  1. I just caught the mention of you from FaceBook Macro Recipes. You remind me of myself 20 years ago with three little macro children. It isn’t easy, but it is so rewarding to raise kids with an awareness of good food and good health. Mine are all grown and my oldest is working toward becoming a chiropractor, my middle daughter is at an intense high-ranking college and has applied for an herbalism internship over the summer in order to balance that out, and my son has taken a gap year before college to volunteer on an organic farm in Hawaii. They still ask me if they can have some juice when they are home… an old habit from when they were little and juice was considered a huge treat 🙂

    They were all little terrors as teens, I suppose nothing can overcome the basic biology of needing to rebel as a teen, but now they are all grateful for their “seaweed beginnings”. To all of you moms sending lentil soup to school for your kids’ lunches… keep it up!! You’re doing the right thing!! I wish this blog had been around then, I sure could have used the support.

      What a lovely letter. Thank you so much for sharing your story with me. My kids are not quite teens yet but if they are anything like me I will have quite the time of it.
