Chow Mein
Well not actually traditional chow mein. I was looking around and running low on groceries. I had some leftovers of yesterdays bok choy, some dried chow mein noodles, a block of tofu and the ingrdients to make that awesome sauce from the carrot top dish.. so ta da..
Yesterdays bok choy
1 Pkg Dried chow mein noodles
1 lb firm tofu
Carrot top dressing
Oil
In a large pot of boiling water cook the chow mein noodles acording to the package directions.. 3-6 minutes. Drain and rinse under cold water and set aside.
Slice the tofu and pat dry with a clean dish cloth or paper towel. Heat 2 tablespoons of oil in a frying pan and cook tofu until both sides are golden.
Mix in the noodles and bok choy. Add the sauce . Cover and bring up to temperature.
– I served this up with a little home made kim chee. The kids loved it!
