Parsnips With Moroccan Spices

2 Tbsp ground cumin

1 Tbsp ground coriander

1 Tbsp ground ginger

2 Tsp ground cinnamon

2 Lbs of parsnips

1 Tbsp olive oil

1 Tsp sea salt

Peel parsnips, cut into thin slices. Heat olive oil  in a large pan. Add 2 tbsp of the spice mix and stir into oil, heating for a minute.Stir in  parsnips, add salt and toss to coat.  Add 1/4 cup of water and the rest of the spices .Cover dish and bake for 25 to 30 minutes, until parsnips are tender.

I added a package of seitan and this dish was awesome!
