Spring Challenge Day 23- Kale Salad

Kale salad

Organic kale, washed and sliced thin

Whole wheat crutons

Dried organic cranberries

Organic sunflower seeds

Organic cherry tomatoes

Cubes of fried tofu

Sliced organic mushrooms

Salad dressing

Here is a salad dressing to try

Raspberry Mustard Dressing 

1/2 Cup extra virgin olive oil

1/4 Cup Apple cider vinegar

2 Tbsp raspberry jam

a touch of maple syrup (if the jam is unsweetend)

1 1/2 Tbsp dijon mustard

1 Tbsp sesame oil

Blend all ingredients in a blender or with a wisk until smooth and creamy
