Miso Soup With Edamame And Corn
1 onion, diced
1-2 Inch piece kombu, soaked and diced
2 Cups shelled edamame
2 Cups corn niblets
6 Cups filtered water
4 Tsp barley miso
In a large pot bring water, onion and kombu to a boil. Turn down heat and let simmer for 5 minutes. Add vegetables and simmer for 5 more minutes. Stir in dissolved miso and simmer for 2 minutes. Serve.
-This had such a nice crunchy texture! We all went back for more.
