Spring Challenge Day 12- Carrot Tops


This one is for my Dad!  

Carrot Tops

1 Bunch carrot greens, washed

3 Tablespoons tahini

1 Teaspoon soy sauce

1 Tablespoon mirin

Bring several inches of water to a boil in a large pot.Add carrot greens , cook for for 2 minutes then shock in ice water drain and squeeze dry.   Drain and squeeze out excess water then dice. If too bitter you can soak n cold water for several hours.

Toss greens with tahini, soy sauce and mirin. Serve.


– This has been my favorite dish so far. I enjoyed it so much I almost didnt share any!This dish can also be made with radish tops!
