Spring Challenge Day 18-Ginger Bok Choy

Ginger Bok Choy

1 Large bunch bok choy, washed and sliced into thin diagnals

1 Tablespoon sesame oil

1 -2 Inch piece of ginger, grated

Sea salt

Heat a large frying pan to medium high, add oil and ginger. Saute 1 minute until fragrant. Add bok choy and saute for 3-5 minutes . Add a pinch of sea salt and cook for 1 more minute. Serve.

Yum, crunchy. If you want a milder ginger falvour you can squeeze the juice from the grated ginger and discard the flesh.
